Ventricina is a typical salami from the area on the border between Abruzzo and Molise. The main ingredient is made up of noble (lean) cuts of pork for about 80%, and the remainder of fatty cuts. The meat is rigorously cut with a knife tip to form irregular cubes of about 3-4 cm. It is free of additives and preservatives except for salt and spices such as sweet or spicy chopped dried pepper, fennel flowers or seeds and pepper.
 It is ideal for sandwiches or as an appetizer. Good for seasoning first courses, such as in ventricina ragù. Ready-made sauce with tomato and spicy salami "Ventricina"
